Sushi is a rice dish made with rice and other ingredients. Chefs use fish most often.<br />

<p>Japanese food has become a favorite in the United States for many years. The Japanese brought to the United States when they came here to live or work.<br />
One of the more popular kinds of Japanese food that has become very popular in the United States is sushi.<br />
The Japanese make it in ways that appeal to the Japanese culture. Restaurants have discovered that you can make in the United States to appeal to an American population.<br />
The main ingredient of sushi is rice.<br />
Originally, this rice was laced with vinegar to add a taste and preserve the rice. Later chefs stopped this practice.<br />
Since rice is the main ingredient of sushi, many have developed recipes of the rice used.<br />
One particular recipe is composed of short-grained rice, rice vinegar, sugar, and salt.<br />
After rice is cooked, the vinegar, sugar and salt is heated in a microwave for about 30 seconds. The rice is added to a large bowl and the other ingredients are then mixed in. The idea is to coat all the rice with this mixture.<br />
Another recipe involves the rice, dried kelp, water, rice vinegar, sugar and salt.<br />
The rice is prepared as usual. It is placed in a saucepan with the kelp and water and left to stand for 30 minutes. While that is happening, the other ingredients are mixed together and allowed to stand.<br />
The rice is then covered and cooked for 15 minutes. When done, the kelp is removed and the other ingredients are mixed in with the rice. All this is allowed to cool. The recipe produces a shiny rice.<br />
Finally, a recipe her father taught her to make.<br />
Rinse the rice 3-5 times. Drain it for about 30 minutes.<br />
While the rice is draining, combine vinegar, sugar, salt and mirim in a bowl.<br />
Place a kelp leaf in a rice pot with the rice, bring to a boil and then simmer for 15 minutes.<br />
Leave covered for 10 minutes. Add the vinegar mixture as the rice is cooling, being careful not to agitate it. Serve at body temperature.<br />
Sushi rice can be cooked in as many ways as the sushi can be prepared.</p>

After some time, their friends took them to a famous restaurant for some sushi. The woman ordered sushi but didn’t remember the kind of fish she wanted with it. When the dish came, it had a whole fish with slices cut into it. As she looked more closely, the fish was still moving. She managed to actually eat a slice of it.<br />
Along with the many stories of sushi are the various kinds of sushi.<br />
One particular kind is Nigiri sushi (Nigirizushi). The word means hand-formed and that is exactly what it is. Each serving is a mound of rich the chef presses into a rectangular box. It is draped with some neta (fish). In aditioin, it has topping made with strips of nori (seaweed) made of octopus, eel, or squid. This dish is usually served in pairs.<br />
One particular type of nigirzushi is a hand-formed clump of sushi rice that has a strip of seaweed wrapped around it. This forms a vessel that contains some finely chopped ingredients. That might include oysters, sea urchin, qual eggs, etc.<br />
Another type is the temarizushi. It is a ball-shaped sushi made by forming the rice into a ball with plastic wrap.<br />
Sushi is an acquired taste due to the practices of using raw fish ingredients and other ingredients such as seaweed and other creatures of the sea. Chefs make sushi in many different ways to include hand forming or nigirzushi. This particular form of sushi is popular because it is easy to make and the ingredients are flexable. The sushi is formed with the hands and other molds to include wooden rectangular boxes. It is easy to work with and it can contain your favorite ingredients depending on your taste.</p>

Did you ever think of rice as sour?<br />
The word sushi is an archaic Japanese grammatical form that means, “sour tasting”. Cooks added vinegar to the rice to preserve it and add to the taste. That is where the sourness came from. Originally the chef placed fish in the fermented rice. The vinegar broke down the fish proteins into amino acids. Then they ate the fish and discarded the rice. That is not longer the practice today.</p>

<p>The modern version of sushi is a creation of Hanaya Yohei. In 1799, he created a “fast food” form that you could eat at a roadside stand or at a theater with your hands. He used freshly caught fish and added no vinegar.<br />
Makizushi (maki sushi) is a rolled form of sushi. The cook uses a bamboo mat called a makisu.<br />
This sushi is mostly wrapped in seaweed but it can also be in cucumber, soy paper, or parsley.<br />
The chef cuts this roll into six or eight pieces. That constitutes a single roll order. There are different types of makizushi.<br />
Futomaki are large rolls made with two or three ingredients. The chef choose these ingredients for their complementary taste. These ingredients are mostly vegetarian but some include topping such as chopped tuna.<br />
Another type of makizushi is called Hosomaki. This small roll is usually made with only one filing. That can be tuna, cucumber, or sliced carrots.<br />
Temaki is a cone-shaped piece of nori (seaweed) filled with rice and other ingredients. This roll is eaten with the fingers because of its shape.<br />
The rice tends to spill out the end because of its shape. Finally Uramaki is a roll where the ingredient is on the inside of the rice and that is surrounded with nori, which is then an outer coating of some other ingredient.<br />
If you like sushi or have never tried it, Maki sushi is a way to see what the traditional Japanese dish is all about. The rolls make it easy for you to eat if you are not adept with chopsticks. You can enjoy the presentation and you can choose what ingredients you want. Or, you can try them all for a wonderful Japanese experience.</p>
